A simple rustic apple galette featuring tender apples and a caramel-kissed crust, perfect for sharing at brunch or cozy evenings.

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup cold unsalted butter, cubed
  • ¼ cup granulated sugar
  • 3-4 tablespoons ice water
  • 3-4 firm apples (like Granny Smith or Honey Crisp), peeled and sliced
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • Coarse sugar for sprinkling
  • Heavy cream or ice cream for serving

Instructions

  1. In a bowl, whisk together flour and a pinch of salt.
  2. Cut cold butter into small cubes and work into flour until mixture resembles coarse crumbs.
  3. Stir in just enough ice water to bring dough together, form into a disk and chill for thirty minutes.
  4. Peel and slice apples and toss with lemon juice, brown sugar, cinnamon, cornstarch, and vanilla.
  5. Roll chilled dough into a rough circle on a floured surface and transfer to a baking sheet lined with parchment.
  6. Pile the apple mixture into the center leaving a border, fold the edge up around the fruit in pleats.
  7. Brush the exposed crust with a little cream and sprinkle coarse sugar over the top.
  8. Bake at 400°F (204°C) until the crust is golden and the fruit is bubbling, about 40 to 50 minutes.
  9. Let cool slightly before drizzling with a simple caramel or serving with ice cream.

Notes

Use very cold butter for a flakier crust. The galette can be made ahead. Leftovers can be stored at room temperature for a day or in the refrigerator for up to three days.
