- 1 ½ cups all-purpose flour
- ½ cup cold unsalted butter, cubed
- ¼ cup granulated sugar
- 3-4 tablespoons ice water
- 3-4 firm apples (like Granny Smith or Honey Crisp), peeled and sliced
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- Coarse sugar for sprinkling
- Heavy cream or ice cream for serving
Instructions
- In a bowl, whisk together flour and a pinch of salt.
- Cut cold butter into small cubes and work into flour until mixture resembles coarse crumbs.
- Stir in just enough ice water to bring dough together, form into a disk and chill for thirty minutes.
- Peel and slice apples and toss with lemon juice, brown sugar, cinnamon, cornstarch, and vanilla.
- Roll chilled dough into a rough circle on a floured surface and transfer to a baking sheet lined with parchment.
- Pile the apple mixture into the center leaving a border, fold the edge up around the fruit in pleats.
- Brush the exposed crust with a little cream and sprinkle coarse sugar over the top.
- Bake at 400°F (204°C) until the crust is golden and the fruit is bubbling, about 40 to 50 minutes.
- Let cool slightly before drizzling with a simple caramel or serving with ice cream.
Notes
Use very cold butter for a flakier crust. The galette can be made ahead. Leftovers can be stored at room temperature for a day or in the refrigerator for up to three days.
