  • Total Time: 65 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 1 can corn, drained
  • 1 can creamed corn
  • 1 cup shredded cheddar cheese
  • 1 box cornbread mix
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 2 eggs
  • Salt and pepper to taste
  • Optional: Chopped green onions for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine the drained corn, creamed corn, shredded cheddar cheese, cornbread mix, milk, sour cream, and eggs. Mix until well combined.
  3. Season with salt and pepper to taste.
  4. Pour the mixture into a greased 9×13 inch baking dish.
  5. Bake in the preheated oven for 45-50 minutes or until the casserole is set and golden on top.
  6. Allow to cool for a few minutes before serving. Garnish with chopped green onions if desired.

Notes

Use full-fat sour cream and a good sharp cheddar for best flavor. Drain the whole kernel corn thoroughly. For a little color and crunch, sprinkle extra cheddar on top during the last 5 minutes of baking.
