- 12 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup olives, sliced
- 1/2 cup Italian dressing
- 1/4 cup parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the cheese tortellini according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, bell pepper, red onion, and olives.
- Pour Italian dressing over the salad and toss to combine.
- Add grated parmesan cheese, salt and pepper to taste, and mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with fresh basil before serving.
Notes
For best results, use slightly undercooked tortellini and cut vegetables into similar-sized pieces. Add a squeeze of fresh lemon juice for brightness.
