A quick and colorful tortellini salad featuring summer produce and creamy parmesan, perfect for picnics and potlucks.

Ingredients

  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup olives, sliced
  • 1/2 cup Italian dressing
  • 1/4 cup parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, bell pepper, red onion, and olives.
  3. Pour Italian dressing over the salad and toss to combine.
  4. Add grated parmesan cheese, salt and pepper to taste, and mix well.
  5. Chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with fresh basil before serving.

Notes

For best results, use slightly undercooked tortellini and cut vegetables into similar-sized pieces. Add a squeeze of fresh lemon juice for brightness.
