Ingredients
Scale
- 1 cup rolled oats
- ½ cup cream cheese, softened
- 1 cup Greek yogurt
- ½ cup vanilla protein powder
- ½ cup fresh blueberries
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium bowl, combine softened cream cheese, Greek yogurt, honey or maple syrup, and vanilla extract until smooth.
- Stir in the vanilla protein powder and a pinch of salt until fully incorporated.
- Fold in the rolled oats gently so the mixture thickens but remains pliable.
- Carefully fold the fresh blueberries into the batter, keeping them as intact as possible.
- Use a spoon or small cookie scoop to portion the mixture and roll into bite-sized balls.
- Place the formed bites on a parchment-lined tray and chill in the refrigerator for at least 30 minutes.
- Once chilled, transfer bites to an airtight container and keep refrigerated until serving.
- Serve chilled or at cool room temperature, pairing with fresh fruit or yogurt if desired.
Notes
Always soften the cream cheese fully for a uniform texture. Store in the refrigerator for up to five days or freeze for two months.
