- 1 egg yolk

- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup unsalted butter (for curd)
- 2 cups fresh blueberries
- Whipped cream (optional, for serving)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine flour, softened butter, powdered sugar, egg yolk, and salt to form a dough.
- Press the dough into a tart pan evenly and prick the bottom with a fork.
- Bake for 20-25 minutes or until golden.
- For the lemon curd, whisk together sugar, eggs, lemon juice, and zest in a saucepan over medium heat.
- Cook until thickened, then whisk in butter until smooth.
- Pour the curd into the cooled crust and refrigerate for a couple of hours to set.
- Top with fresh blueberries before serving.
- Optionally, serve with whipped cream.
Notes
Use cold butter for a flakier texture. Strain the curd for an ultra-silky finish. Assemble just before serving for best texture.
