  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the creamed mixture.
  5. Drop dough by tablespoons onto ungreased baking sheets.
  6. Bake for 10-12 minutes or until edges are lightly golden.
  7. Let cookies cool completely.
  8. In a mixing bowl, whip the heavy cream with powdered sugar until stiff peaks form.
  9. Spoon a dollop of whipped cream onto the flat side of one cookie, then top with another cookie to make a sandwich.
  10. In a microwave-safe bowl, melt chocolate chips and vegetable oil until smooth.
  11. Drizzle or dip cookies in the chocolate glaze.
  12. Allow to set before serving.

Notes

Use room temperature butter and eggs for better texture. For uniform cookies, use a small scoop. Store unassembled cookies and filling separately for best results.
