Bright and easy pasta dish combining fresh bruschetta flavors with tender chicken.

Ingredients

  • 2 chicken breasts
  • 8 oz pasta
  • 2 cups fresh tomatoes, chopped
  • 1/2 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1/2 cup parmesan cheese, grated

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken breasts, season with salt and pepper, and cook until browned and cooked through.
  3. Add minced garlic to the skillet and cook for another minute.
  4. Stir in chopped fresh tomatoes and cook until they begin to soften.
  5. Add the cooked pasta to the skillet along with fresh basil and toss everything together.
  6. Serve warm, topped with grated parmesan cheese.

Notes

Use the ripest tomatoes for best flavor. Add basil at the last moment to preserve its fragrance.
