- 2 chicken breasts
- 8 oz pasta
- 2 cups fresh tomatoes, chopped
- 1/2 cup fresh basil, chopped
- 3 cloves garlic, minced
- 3 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- 1/2 cup parmesan cheese, grated
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken breasts, season with salt and pepper, and cook until browned and cooked through.
- Add minced garlic to the skillet and cook for another minute.
- Stir in chopped fresh tomatoes and cook until they begin to soften.
- Add the cooked pasta to the skillet along with fresh basil and toss everything together.
- Serve warm, topped with grated parmesan cheese.
Notes
Use the ripest tomatoes for best flavor. Add basil at the last moment to preserve its fragrance.
