Delightful cookies combining creamy peanut butter, butterscotch, and chocolate with a crunchy texture.

  • Total Time: 25 minutes
  • Yield: 24 cookies 1x

Ingredients

Scale
  • ½ cup (1 stick) unsalted butter, at room temperature
  • ½ cup creamy peanut butter
  • ½ cup granulated sugar, plus ¼ cup for coating
  • ½ cup lightly packed light brown sugar
  • 1 large egg + 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 ½ cups Rice Krispies cereal, plus ½ cup for coating
  • Heaping ½ cup dark chocolate chips
  • Heaping ½ cup butterscotch chips
  • 1 heaping tablespoon creamy peanut butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a mixing bowl, cream together the unsalted butter, creamy peanut butter, granulated sugar, and light brown sugar until the mixture is light and fluffy.
  3. Beat in the large egg, egg yolk, and pure vanilla extract until well blended.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and kosher salt. Gradually mix this dry mixture into the wet ingredients until just combined.
  5. Gently fold in 1 ½ cups of Rice Krispies cereal into the cookie dough.
  6. Roll the cookie dough into small balls and coat each ball lightly in the remaining ¼ cup of granulated sugar and ½ cup of Rice Krispies for that extra crunch.
  7. Place the coated balls on the prepared baking sheets and bake for about 9–11 minutes, or until the edges are set but the centers remain soft.
  8. Allow the cookies to cool completely on the baking sheets.
  9. For the topping, melt together the dark chocolate chips, butterscotch chips, and 1 tablespoon of creamy peanut butter in the microwave using 20–30 second bursts, stirring until smooth.
  10. Drizzle or spread the melted mixture over the cooled cookies, then let them set before serving.

Notes

For a lighter version, replace butter with unsweetened applesauce. For vegan options, use flaxseed meal instead of eggs.
