Ingredients

  • 2 cooked chicken breasts, shredded
  • 1 ripe avocado, mashed
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 slices of bread (your choice)
  • Salt and pepper to taste
  • Butter (for toasting the bread)

Instructions

  1. Preheat a skillet over medium heat.
  2. In a bowl, combine the shredded chicken, mashed avocado, cheese, salt, and pepper.
  3. Spread butter on one side of each slice of bread.
  4. Assemble sandwiches by placing the chicken avocado mixture between two slices of bread, buttered side out.
  5. Place the sandwiches in the skillet and grill until golden brown and the cheese has melted, about 3-4 minutes per side.
  6. Remove from skillet, slice, and serve warm.

Notes

For a healthier twist, use whole grain or rye bread and add leafy greens like spinach or kale.
