Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic; sauté until they become translucent.
- Season the chicken thighs with paprika, salt, and pepper, then brown them in the pot.
- Add the chopped bell pepper and cook for a few more minutes.
- Pour in the diced tomatoes and chicken broth; stir to combine.
- Bring the mixture to a boil, then reduce the heat and simmer for about 20-25 minutes until the chicken is cooked through.
- Stir in the sour cream right before serving.
- Serve hot over egg noodles or rice.
Notes
Use bone-in, skin-on chicken thighs for juiciness and allow the sauce to simmer for optimal flavor.
