- 1 kg chicken, cut into pieces
- 2 tablespoons oil
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 2 tablespoons Xacuti spice mix
- 1 cup coconut milk
- Salt to taste
- Fresh coriander for garnish
Instructions
- Heat oil in a large pan over medium heat.
- Add the onions and sauté until golden brown.
- Stir in garlic and ginger, cooking for 2 minutes.
- Add tomatoes and cook until softened.
- Mix in the Xacuti spice mix and cook for a minute.
- Add chicken pieces and sauté until browned.
- Pour in coconut milk and bring to a simmer.
- Cook until chicken is tender and the sauce thickens, about 25-30 minutes.
- Season with salt and garnish with fresh coriander.
- Serve hot with rice or naan.

For healthier options, consider using light coconut milk or increasing the vegetable content.
