Ingredients

  • 1 kg chicken, cut into pieces
  • 2 tablespoons oil
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 2 tablespoons Xacuti spice mix
  • 1 cup coconut milk
  • Salt to taste
  • Fresh coriander for garnish

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Add the onions and sauté until golden brown.
  3. Stir in garlic and ginger, cooking for 2 minutes.
  4. Add tomatoes and cook until softened.
  5. Mix in the Xacuti spice mix and cook for a minute.
  6. Add chicken pieces and sauté until browned.
  7. Pour in coconut milk and bring to a simmer.
  8. Cook until chicken is tender and the sauce thickens, about 25-30 minutes.
  9. Season with salt and garnish with fresh coriander.
  10. Serve hot with rice or naan.
