Ingredients

  • 1 packet taco seasoning
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 2 cups romaine lettuce, chopped
  • 1 cup tomatoes, diced
  • 1 cup bell peppers, chopped
  • 1 avocado, diced
  • 1 lime, juiced
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, cook the ground turkey until browned. Drain any excess fat.
  2. Add taco seasoning to the turkey and follow package instructions to prepare.
  3. In a bowl, mix together corn, black beans, lime juice, olive oil, salt, and pepper.
  4. To assemble the bowls, layer the chopped romaine lettuce, diced tomatoes, chopped bell peppers, and the turkey mixture.
  5. Top with the corn and bean mix and diced avocado.

Notes
