- 1/2 cup creamy peanut butter
- 2 tbsp unsalted butter, softened to room temperature
- 3/4 cup powdered sugar
- 50 mini pretzels
- 1 cup semi sweet chocolate chips
Instructions
- Add the peanut butter and butter to a mixing bowl and beat until smooth.
- Add in the powdered sugar and continue mixing until well combined.
- Portion the peanut butter mixture into approximately 1 teaspoon balls.
- Press one peanut butter ball between two mini pretzels to form a sandwich.
- Repeat until all filling is used and pretzel sandwiches are made.
- Melt the chocolate in the microwave in 30 second intervals, stirring well between each interval, until fully melted and smooth.
- Dip each pretzel sandwich into the melted chocolate, coating mostly the center and leaving a bit of pretzel exposed if desired.
- Place dipped bites on a parchment lined tray and refrigerate for a few minutes until the chocolate is set.
- Enjoy immediately or store as desired.
Notes
For best results, use room temperature butter for a smoother filling. You can customize toppings with nuts or sea salt.
