  • 170 g (1½ sticks / ¾ cup) unsalted butter, softened
  • 200 g (1 cup) granulated sugar
  • 1 large egg, room temperature
  • 1 Tbsp vanilla extract
  • ¼ tsp almond extract (optional)
  • 54 g (⅓ cup) Christmas jimmies sprinkles
  • 283 g (1¼ bricks / 10 oz) full-fat cream cheese, softened
  • 184 g (13 Tbsp) salted butter, softened
  • 2 tsp vanilla extract
  • ⅛ tsp salt
  • 150 g (1¼ cups) powdered sugar, sifted
  • 80 ml (⅓ cup) heavy cream, very cold
  • 24 g (2 Tbsp) additional Christmas sprinkles for decoration

Instructions

  1. Preheat oven to 350°F (175°C) and line 2-3 baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In the bowl of a stand mixer, beat softened butter and granulated sugar on medium speed until light and fluffy, about 1-2 minutes.
  4. Add egg and vanilla extract, beating until combined, about 30 seconds.
  5. Gradually add dry ingredients, mixing on low until just combined.
  6. Gently fold Christmas jimmies sprinkles into the dough.
  7. Use a cookie scoop to portion the dough onto the prepared baking sheets, placing them about 2 inches apart.
  8. Slightly flatten each dough ball to maintain a thickness of at least ½ inch.
  9. Bake for 9-11 minutes, or until edges are set and tops appear soft. Do not allow cookies to brown.
  10. Remove from oven and shape into perfect circles if needed.
  11. Cool cookies on the baking sheets for 5 minutes before transferring to a wire rack.
  12. For the frosting, beat cream cheese and butter until smooth. Add vanilla and salt; mix until combined.
  13. Gradually add sifted powdered sugar, then drizzle in heavy cream while whisking until stiff peaks form.
  14. Frost cookies and sprinkle with additional Christmas sprinkles before serving.

Notes

Ensure butter and eggs are at room temperature for best results. You can replace the all-purpose flour with gluten-free flour for a gluten-free version.
