- 54 g (⅓ cup) Christmas jimmies sprinkles
- 283 g (1¼ bricks / 10 oz) full-fat cream cheese, softened
- 184 g (13 Tbsp) salted butter, softened
- 2 tsp vanilla extract
- ⅛ tsp salt
- 150 g (1¼ cups) powdered sugar, sifted
- 80 ml (⅓ cup) heavy cream, very cold
- 24 g (2 Tbsp) additional Christmas sprinkles for decoration
Instructions
- Preheat oven to 350°F (175°C) and line 2-3 baking sheets with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
- In the bowl of a stand mixer, beat softened butter and granulated sugar on medium speed until light and fluffy, about 1-2 minutes.
- Add egg and vanilla extract, beating until combined, about 30 seconds.
- Gradually add dry ingredients, mixing on low until just combined.
- Gently fold Christmas jimmies sprinkles into the dough.
- Use a cookie scoop to portion the dough onto the prepared baking sheets, placing them about 2 inches apart.
- Slightly flatten each dough ball to maintain a thickness of at least ½ inch.
- Bake for 9-11 minutes, or until edges are set and tops appear soft. Do not allow cookies to brown.
- Remove from oven and shape into perfect circles if needed.
- Cool cookies on the baking sheets for 5 minutes before transferring to a wire rack.
- For the frosting, beat cream cheese and butter until smooth. Add vanilla and salt; mix until combined.
- Gradually add sifted powdered sugar, then drizzle in heavy cream while whisking until stiff peaks form.
- Frost cookies and sprinkle with additional Christmas sprinkles before serving.
Notes
Ensure butter and eggs are at room temperature for best results. You can replace the all-purpose flour with gluten-free flour for a gluten-free version.
