  • Total Time: 45 minutes
  • Yield: 24 servings 1x

Ingredients

Scale
  • 270 g (2¼ cups) all-purpose flour
  • 4 g (1 tsp) baking powder
  • ¼ tsp salt
  • 170 g (1½ sticks / ¾ cup) unsalted butter, softened
  • 200 g (1 cup) granulated sugar
  • 1 large egg, room temperature
  • 1 Tbsp vanilla extract
  • ¼ tsp almond extract (optional)
  • 54 g (⅓ cup) Christmas jimmies sprinkles
  • 283 g (1¼ bricks / 10 oz) full-fat cream cheese, softened
  • 184 g (13 Tbsp) salted butter, softened
  • 2 tsp vanilla extract
  • ⅛ tsp salt
  • 150 g (1¼ cups) powdered sugar, sifted
  • 80 ml (⅓ cup) heavy cream, very cold
  • 24 g (2 Tbsp) Christmas sprinkles

Instructions

  1. Preheat the oven to 350°F and line 2-3 baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a stand mixer, beat the softened butter and granulated sugar until light and fluffy, about 1-2 minutes.
  4. Add the egg, vanilla extract, and almond extract (if using) to the mixture, and beat until well combined, about 30 seconds.
  5. Gradually incorporate the dry mixture into the wet mixture, mixing on low speed until just combined.
  6. Gently fold in the Christmas jimmies sprinkles.
  7. Using a cookie scoop, portion out the dough and roll into balls, placing them on the baking sheets.
  8. Slightly flatten each dough ball and bake for 9-11 minutes until edges are set.
  9. Remove from the oven and shape each cookie into a perfect circle while still warm.
  10. Cool on the baking sheets for 5 minutes before transferring to a wire rack.
  11. For frosting, beat softened cream cheese and butter until creamy.
  12. Add vanilla and salt, mixing until combined.
  13. Gradually mix in sifted powdered sugar and slowly drizzle in cold heavy cream until stiff peaks form.
  14. Frost cooled cookies and sprinkle with Christmas sprinkles before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week. The cookie dough can be frozen for longer storage.
