Ingredients

  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon cinnamon
  • 2 tablespoons sugar

Instructions

  1. In a mixing bowl, whisk together the flour, milk, eggs, cinnamon, sugar, vanilla extract, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and add a little butter or oil.
  3. Pour a ladle of batter into the skillet, swirling to coat the bottom.
  4. Cook for 1-2 minutes until the edges start to lift, then flip and cook for an additional minute.
  5. Repeat with the remaining batter.
  6. Serve warm, drizzled with cream cheese frosting if desired.

Use a well-seasoned or non-stick skillet for best results. Let the batter rest briefly for smoother crepes.
