- 2 chicken breasts
- 4 cups chicken broth
- 1 cup noodles (such as egg noodles or ramen)
- 1 tablespoon fresh ginger, minced
- 3 cloves garlic, minced
- 1 carrot, sliced
- 1 celery stalk, sliced
- 2 green onions, chopped
- Salt and pepper to taste
- Optional: soy sauce or sesame oil for flavor
Instructions
- In a large pot, heat a bit of oil over medium heat. Add the minced ginger and garlic and sauté for about 1 minute.
- Add the chicken broth, chicken breasts, carrot, and celery. Bring to a boil, then reduce to a simmer.
- Cook until the chicken is fully cooked, around 15 to 20 minutes. Remove the chicken, shred it, and return it to the pot.
- Add the noodles and cook according to package instructions until tender.
- Season with salt and pepper, and add soy sauce or sesame oil if desired.
- Serve hot, garnished with chopped green onions.
Notes
For best results, mince the ginger and garlic finely and adjust salt based on the sodium content of the broth. Make sure not to overcook the noodles for the best texture.
