Ingredients

  • 1 cup Biscoff biscuits, crushed
  • 1/2 cup cookie butter
  • 1/2 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate for coating (optional)
  • Sprinkles or crushed biscuits for garnish (optional)

Instructions

  1. In a mixing bowl, combine crushed Biscoff biscuits, cookie butter, cream cheese, powdered sugar, and vanilla extract. Mix until well combined.
  2. Chill the mixture in the refrigerator for about 30 minutes to make it easier to handle.
  3. Once chilled, scoop out small portions and roll them into balls.
  4. If desired, dip each truffle in melted chocolate and then roll in sprinkles or crushed biscuits.
  5. Place the truffles on a parchment-lined tray and chill again until set.
  6. Serve and enjoy!

Notes

For best results, work with chilled filling and use a small cookie scoop for uniform balls. Store in an airtight container in the refrigerator for up to two weeks.
