- 6 large eggs
- 1/2 cup cottage cheese
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/4 cup cooked, chopped bacon or sausage (optional)
- Salt and pepper to taste
- Chopped fresh herbs (like chives or spinach) for added flavor (optional)
- Non-stick cooking spray or muffin tin liners
Instructions
- Preheat your oven to 325°F (163°C).
- In a blender, combine the eggs, cottage cheese, shredded cheese, and a pinch of salt and pepper. Blend until smooth.
- If using, add the cooked bacon or sausage and the chopped herbs. Pulse a couple of times to blend.
- Spray a silicone muffin tin with non-stick cooking spray or use muffin liners.
- Pour the egg mixture into each cup, filling them about 3/4 full.
- Place the muffin tin in the oven and bake for 25-30 minutes until the egg bites are set and slightly puffed.
- Remove from the oven, let them cool slightly, then pop out of the muffin tin. Enjoy warm or store in the refrigerator for quick breakfasts.
Notes
These egg bites can be customized with your favorite cheeses, herbs, and veggies.
