Ingredients

  • 20 oz cheese tortellini
  • 1 lb steak (sirloin or ribeye)
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Smoked paprika, to taste
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan, shredded or freshly grated
  • Parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Cracked black pepper (optional garnish)

Instructions

  1. Season steak on both sides with salt, black pepper, garlic powder, and smoked paprika.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Sear the steak 3 to 4 minutes per side for medium rare, adjusting time for thickness.
  4. Transfer steak to a cutting board and let it rest for 5 minutes, then slice thinly against the grain.
  5. Cook tortellini according to package instructions until al dente, then drain and set aside.
  6. In the same skillet, reduce heat to medium and add butter to melt.
  7. Add minced garlic and cook 30 to 45 seconds until fragrant but not browned.
  8. Pour in heavy cream and whole milk, stirring to combine and simmer gently for 2 to 3 minutes.
  9. Stir in parmesan until melted and the sauce is smooth; season with salt and cracked black pepper to taste.
  10. Add cooked tortellini and sliced steak to the skillet and gently toss to coat in the sauce.
  11. Finish with chopped parsley and a pinch of red pepper flakes if using, then serve immediately.

Notes

Use fresh or refrigerated tortellini for the best texture. Let the sauce rest off the heat before mixing for enhanced flavor.
