- 2 chicken breasts, cooked and shredded (about 2 cups)
- 8 oz cream cheese, softened
- 1 cup mozzarella cheese, shredded (plus extra for topping if desired)
- 2 cups fresh spinach, roughly chopped
- 1 cup chicken broth (plus a reserved 1/4 cup)
- 1 cup mixed vegetables (optional)
- Salt and pepper to taste
- Garlic powder (optional)
- Olive oil or cooking spray to grease the baking dish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the cream cheese, 1 cup chicken broth (reserve 1/4 cup), garlic powder if using, salt, and pepper until smooth.
- Fold in the cooked, shredded chicken and chopped fresh spinach until evenly combined.
- Pour the mixture into a greased baking dish and sprinkle with shredded mozzarella.
- If you like, scatter mixed vegetables over the top for color and extra nutrition.
- Bake for 25–30 minutes, until cheese is melted and bubbly and the center is hot.
- Let rest a few minutes, then serve warm and enjoy.
Notes
Use rotisserie chicken to save time and boost flavor. If the casserole seems thick, stir in the reserved 1/4 cup chicken broth before baking.
