  • 1 cup mozzarella cheese, shredded (plus extra for topping if desired)
  • 2 cups fresh spinach, roughly chopped
  • 1 cup chicken broth (plus a reserved 1/4 cup)
  • 1 cup mixed vegetables (optional)
  • Salt and pepper to taste
  • Garlic powder (optional)
  • Olive oil or cooking spray to grease the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the cream cheese, 1 cup chicken broth (reserve 1/4 cup), garlic powder if using, salt, and pepper until smooth.
  3. Fold in the cooked, shredded chicken and chopped fresh spinach until evenly combined.
  4. Pour the mixture into a greased baking dish and sprinkle with shredded mozzarella.
  5. If you like, scatter mixed vegetables over the top for color and extra nutrition.
  6. Bake for 25–30 minutes, until cheese is melted and bubbly and the center is hot.

Notes
