Ingredients
Scale
- 1 cup orzo pasta
- 1 lb chicken breasts, diced
- 2 cups broccoli florets
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded cheese (e.g., cheddar or mozzarella)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through.
- Stir in the orzo and cook for 1-2 minutes.
- Add chicken broth and bring to a boil. Reduce heat to simmer and cook until orzo is tender, about 10-12 minutes.
- Stir in the broccoli and cook for another 3-4 minutes until tender.
- Pour in the heavy cream and cheese, stirring until melted and creamy.
- Serve hot, and enjoy your comforting one-pot meal!
Notes
For best results, brown the chicken well and watch the orzo closely as cooking times may vary. Freshly grated cheese yields creamier results.
