  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 cup heavy cream
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Season the chicken breasts with garlic powder, paprika, oregano, salt, and pepper.
  2. Add the seasoned chicken to the skillet and cook until browned and cooked through, about 6-7 minutes on each side. Remove the chicken and set aside.
  3. In the same skillet, add the halved cherry tomatoes and spinach; sauté until the spinach wilts.
  4. Reduce the heat and stir in the heavy cream and crumbled feta cheese; mix until well combined.
  5. Return the chicken to the skillet and let it simmer for 2-3 minutes to absorb the flavors.
  6. Garnish with fresh parsley and serve hot.

Notes

Add other vegetables like bell peppers or zucchini for added nutrition. Substitute heavy cream with Greek yogurt for a lighter version.
