- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 slices of bread (e.g., ciabatta or your choice)
- 1 cup romaine lettuce, chopped
- 1/2 cup Caesar dressing
- Extra Parmesan for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix breadcrumbs, grated Parmesan, garlic powder, salt, and pepper.
- Coat each chicken breast in the breadcrumb mixture until fully covered.
- Heat olive oil in a pan over medium heat and add the chicken breasts. Cook until golden brown on both sides, about 4-5 minutes each side.
- Transfer cooked chicken to a baking sheet and bake for an additional 10-15 minutes, or until cooked through.
- Toast slices of bread in the oven for a few minutes.
- Assemble the sandwiches by placing crispy chicken on the toasted bread, topped with chopped romaine lettuce and drizzled Caesar dressing.
- Garnish with extra Parmesan cheese and serve.
Notes
For best results, dry the chicken before coating and use freshly grated Parmesan. Store components separately to maintain texture.
