  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 slices of bread (e.g., ciabatta or your choice)
  • 1 cup romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • Extra Parmesan for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix breadcrumbs, grated Parmesan, garlic powder, salt, and pepper.
  3. Coat each chicken breast in the breadcrumb mixture until fully covered.
  4. Heat olive oil in a pan over medium heat and add the chicken breasts. Cook until golden brown on both sides, about 4-5 minutes each side.
  5. Transfer cooked chicken to a baking sheet and bake for an additional 10-15 minutes, or until cooked through.
  6. Toast slices of bread in the oven for a few minutes.
  7. Assemble the sandwiches by placing crispy chicken on the toasted bread, topped with chopped romaine lettuce and drizzled Caesar dressing.
  8. Garnish with extra Parmesan cheese and serve.
