- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1/2 cup almond paste
- 1/2 cup powdered sugar
- 1/4 cup sliced almonds
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup powdered sugar (for glaze)
- 2-3 tablespoons milk (for glaze)
Instructions
- Preheat the oven to 400°F (200°C).
- In a saucepan, combine water and butter; bring to a boil.
- Stir in flour and cook until the mixture pulls away from the sides.
- Remove from heat and beat in eggs, one at a time, until well mixed.
- Spread the choux pastry onto a baking sheet lined with parchment paper, forming a rectangle.
- Bake for 25-30 minutes or until golden brown.
- Meanwhile, in a bowl, mix almond paste, powdered sugar, vanilla, and almond extract until smooth.
- Once the pastry is cool, spread the almond mixture on top and sprinkle with sliced almonds.
- For the glaze, mix powdered sugar with milk until smooth and drizzle over the almond topping.
- Slice and serve for brunch or dessert.
Notes
Use room-temperature eggs for better consistency. Store leftovers in an airtight container for up to two days.
