- 1/4 cup chopped sun-dried tomatoes
- 1 tsp crushed red pepper flakes (optional)
- 1/2 cup dried cranberries (optional)
- 8 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine softened cream cheese, shredded mozzarella, grated Parmesan, chopped sun-dried tomatoes, basil, parsley, garlic powder, salt, and pepper. Blend until smooth and well-mixed.
- If desired, fold in crushed red pepper flakes and dried cranberries for added flavor.
- Place the mixture onto a piece of plastic wrap and form it into a log shape.
- Wrap the log tightly in plastic wrap and refrigerate for at least 2 hours or until it is firm.
- For a special touch, remove the plastic wrap and roll the log in your choice of fresh herbs or chopped nuts before serving.
- Serve chilled with an assortment of crackers or sliced bread.
Notes
Make it a meal by serving alongside a salad or spice it up with different herbs like thyme or oregano. Roll in chopped walnuts or pecans for extra crunch.
