Ingredients

  • 1/4 cup chopped sun-dried tomatoes
  • 1 tsp crushed red pepper flakes (optional)
  • 1/2 cup dried cranberries (optional)
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine softened cream cheese, shredded mozzarella, grated Parmesan, chopped sun-dried tomatoes, basil, parsley, garlic powder, salt, and pepper. Blend until smooth and well-mixed.
  2. If desired, fold in crushed red pepper flakes and dried cranberries for added flavor.
  3. Place the mixture onto a piece of plastic wrap and form it into a log shape.
  4. Wrap the log tightly in plastic wrap and refrigerate for at least 2 hours or until it is firm.
  5. For a special touch, remove the plastic wrap and roll the log in your choice of fresh herbs or chopped nuts before serving.
  6. Serve chilled with an assortment of crackers or sliced bread.

Notes

Make it a meal by serving alongside a salad or spice it up with different herbs like thyme or oregano. Roll in chopped walnuts or pecans for extra crunch.
