  • 1 package phyllo dough (about 16 oz), thawed
  • 1 ½ cups pumpkin puree (fresh or canned)
  • 1 cup walnuts, finely chopped
  • ½ cup pistachios, finely chopped (plus extra for topping)
  • ½ cup granulated sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ¼ tsp ground ginger
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 1 cup unsalted butter, melted
  • 1 cup water
  • 1 cup granulated sugar (for syrup)
  • ½ cup honey
  • 1 cinnamon stick
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract (for syrup)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish with melted butter.
  2. In a mixing bowl, combine the pumpkin puree, chopped walnuts, chopped pistachios, granulated sugar, cinnamon, nutmeg, cloves, ginger, salt, and vanilla extract to create the filling.
  3. Unroll the phyllo dough and cover it with a damp towel to prevent drying out.
  4. Place one sheet of phyllo dough in the greased baking dish and brush it lightly with melted butter. Repeat this process for about 8 sheets, layering them together.
  5. Spread the pumpkin filling evenly over the phyllo layers, smoothing it out until even.
  6. Top the filling with another 6-8 phyllo sheets, brushing each layer with melted butter as you go.
  7. Cut the baklava into diamond or square shapes before placing it in the oven.
  8. Bake for 45-50 minutes until golden brown and crispy.
  9. While the baklava is baking, prepare the syrup by boiling the water, granulated sugar, honey, cinnamon stick, and lemon juice for 10 minutes.
  10. After the baklava has finished baking, pour the warm syrup evenly over the hot baklava and let it cool.
  11. Top with additional chopped pistachios before serving.

Notes

Ensure the phyllo dough stays covered with a damp towel to prevent it from drying out. Be generous with the melted butter for added flavor.
