- 1 package phyllo dough (about 16 oz), thawed
- 1 ½ cups pumpkin puree (fresh or canned)
- 1 cup walnuts, finely chopped
- ½ cup pistachios, finely chopped (plus extra for topping)
- ½ cup granulated sugar
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- ¼ tsp ground ginger
- ¼ tsp salt
- 1 tsp vanilla extract
- 1 cup unsalted butter, melted
- 1 cup water
- 1 cup granulated sugar (for syrup)
- ½ cup honey
- 1 cinnamon stick
- 1 tbsp lemon juice
- 1 tsp vanilla extract (for syrup)
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish with melted butter.
- In a mixing bowl, combine the pumpkin puree, chopped walnuts, chopped pistachios, granulated sugar, cinnamon, nutmeg, cloves, ginger, salt, and vanilla extract to create the filling.
- Unroll the phyllo dough and cover it with a damp towel to prevent drying out.
- Place one sheet of phyllo dough in the greased baking dish and brush it lightly with melted butter. Repeat this process for about 8 sheets, layering them together.
- Spread the pumpkin filling evenly over the phyllo layers, smoothing it out until even.
- Top the filling with another 6-8 phyllo sheets, brushing each layer with melted butter as you go.
- Cut the baklava into diamond or square shapes before placing it in the oven.
- Bake for 45-50 minutes until golden brown and crispy.
- While the baklava is baking, prepare the syrup by boiling the water, granulated sugar, honey, cinnamon stick, and lemon juice for 10 minutes.
- After the baklava has finished baking, pour the warm syrup evenly over the hot baklava and let it cool.
- Top with additional chopped pistachios before serving.
Notes
Ensure the phyllo dough stays covered with a damp towel to prevent it from drying out. Be generous with the melted butter for added flavor.
