- 1 tablespoon all-purpose flour

- 3–4 garlic cloves, minced
- 1 cup milk

Instructions
- Place a saucepan over medium heat and melt the butter.
- Add minced garlic and sauté for 1–2 minutes until fragrant.
- Sprinkle in flour and stir to form a paste (roux).
- Slowly pour in milk, whisking constantly to prevent lumps. Simmer until slightly thickened.
- Add the thawed, well-drained spinach. Stir until fully combined and heated through.
- Season with salt and pepper to taste. Add a pinch of nutmeg if desired.
- Serve warm as a side dish or spooned over toast, grains, or proteins.

Start with well-drained spinach to avoid watery sauce. Whisk steadily while adding milk for a smooth finish.
