Indulgent gluten-free cinnamon rolls with a rich, buttery center and a choice of cream cheese frosting or simple glaze.

  • 4 ½ cups (680g) King Arthur Gluten-Free Bread Flour
  • ⅓ cup (65g) granulated sugar
  • 2 ¼ teaspoons instant yeast (1 packet)
  • 2 teaspoons salt
  • 1 teaspoon baking powder
  • 1 ¼ cup (295ml) warm water
  • 1 cup (236ml) warm whole milk
  • 2 large eggs
  • 6 tablespoons (85g) melted butter
  • 1 cup (200g) brown sugar
  • 2 tablespoons cinnamon
  • 8 tablespoons (113g) melted butter
  • 8 ounces (226g) softened cream cheese
  • 4 tablespoons (56g) softened butter
  • 1 ⅓ cup (160g) powdered sugar
  • 2 teaspoons vanilla extract
  • 3 cups (340g) powdered sugar
  • 1/3 – 1/2 cup milk
  • 2 teaspoons vanilla extract
  • pinch of salt

Instructions

  1. Combine flour, sugar, yeast, salt, and baking powder and whisk to blend.
  2. Stir in warm water, warm milk, eggs, and melted butter until a soft dough forms.
  3. Mix brown sugar and cinnamon, roll out the dough, spread melted butter, sprinkle filling, then roll and slice into rolls.
  4. Let the shaped rolls rise until puffy, then bake until golden and set.
  5. Beat cream cheese, softened butter, powdered sugar, and vanilla until smooth and spread on warm rolls.
  6. Whisk powdered sugar, milk, vanilla, and a pinch of salt to a pourable consistency and drizzle over cooled or warm rolls.

Notes

Use warm liquids to protect the yeast. Chill the dough slightly if it feels sticky to slice more easily.
