Ingredients

  • 2 cups rolled oats
  • 1 cup milk or non-dairy milk
  • 1/2 cup yogurt (preferably acai-flavored)
  • 1/4 cup honey or maple syrup
  • 1 ripe banana, mashed
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt
  • Fresh fruit for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the oats, milk, yogurt, honey, mashed banana, vanilla extract, baking powder, and salt. Mix until well combined.
  3. Grease a muffin tin and spoon the oatmeal mixture into the cups, filling them about 2/3 full.
  4. Bake in the preheated oven for 20-25 minutes, or until the edges are golden and the tops are set.
  5. Let cool for a few minutes before removing from the tin.
  6. Serve warm or store in the fridge for a quick breakfast or dessert. Optionally, top with fresh fruit before serving.

Notes

Use rolled oats for the best chewy texture, and press the mixture down slightly in the tin for even baking.
