  • 1 butternut squash, peeled and diced
  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the diced butternut squash with olive oil, salt, pepper, paprika, and thyme.
  3. Spread the butternut squash on a baking sheet and roast for about 25-30 minutes, until tender and slightly caramelized.
  4. In a skillet, heat a bit of olive oil over medium heat, add the chopped onion and garlic, and sauté until the onion is translucent.
  5. Add the ground turkey to the skillet and cook until browned and cooked through.
  6. Combine the roasted squash with the ground turkey mixture and stir well.
  7. Serve warm, garnished with fresh parsley.
