- 1 butternut squash, peeled and diced
- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the diced butternut squash with olive oil, salt, pepper, paprika, and thyme.
- Spread the butternut squash on a baking sheet and roast for about 25-30 minutes, until tender and slightly caramelized.
- In a skillet, heat a bit of olive oil over medium heat, add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the ground turkey to the skillet and cook until browned and cooked through.
- Combine the roasted squash with the ground turkey mixture and stir well.
- Serve warm, garnished with fresh parsley.
Notes
Choose a heavy butternut squash with firm skin for the best flavor. Adjust seasoning to taste.
