  • 1 cup (226g) unsalted butter, softened
  • 1/2 tsp baking powder
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 cup powdered sugar (for glaze)
  • 1-2 tbsp brewed coffee (for glaze)
  • Golden sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract, then stir in the espresso powder until well combined.
  4. In another bowl, mix the all-purpose flour, cocoa powder, and baking powder.
  5. Gradually add the dry mixture into the wet mixture, stirring until a dough forms.
  6. Roll out the dough on a floured surface and cut it into festive tree shapes.
  7. Place your cookie shapes on a lined baking sheet.
  8. Bake for 10-12 minutes or until the cookies are firm to the touch.
  9. Let the cookies cool completely on a wire rack.
  10. For the glaze, mix the powdered sugar with brewed coffee in a bowl until smooth.
  11. Drizzle the glaze over the cooled cookies and garnish with golden sprinkles.

Notes

Chill the dough if it becomes too warm while rolling out. Use a good-quality instant espresso powder for the best flavor.
