Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, minced garlic, Parmesan cheese, Italian herbs, salt, and pepper.
- Add the chicken breasts and potatoes to the bowl, and toss until they are evenly coated with the mixture.
- Transfer the chicken and potatoes to a baking dish.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the potatoes are tender and golden brown.
- Garnish with fresh parsley before serving.
Notes
Choose chicken breasts of similar size for even cooking. Cut potatoes into uniform cubes for consistent browning. For extra crispiness, broil for 1-2 minutes at the end of baking.
