Ingredients

  • 1 cup warm water
  • 1 packet active dry yeast
  • 2 tablespoons granulated sugar
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup baking soda
  • 1 large egg
  • 1 tablespoon water
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons minced garlic
  • Salt for sprinkling

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, combine warm water, yeast, and sugar, allowing it to sit for 5-10 minutes until frothy.
  3. In a large bowl, mix flour and salt. Pour in the yeast mixture and stir until a dough forms. Knead until smooth, about 5 minutes.
  4. Shape the dough into small balls.
  5. In a pot, bring water and baking soda to a boil. Boil each dough ball for about 30 seconds, then remove and place on a baking sheet.
  6. Mix the egg and tablespoon of water, and brush the mixture over the pretzel bites.
  7. Sprinkle with grated Parmesan cheese, minced garlic, and extra salt.
  8. Bake for 12-15 minutes until golden brown.
  9. Serve warm.

Notes

Use warm water for yeast proofing, and don’t skip the baking soda bath for texture. Store in an airtight container.
