- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for filling)
- Spiced sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, baking soda, salt, ginger, cinnamon, nutmeg, and allspice. Stir to incorporate.
- In another large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg, molasses, and vanilla extract until well blended.
- Gradually mix in the dry ingredients until fully combined; do not overmix.
- In a separate bowl, blend cream cheese, powdered sugar, and additional vanilla extract until smooth and creamy.
- Roll the cookie dough into balls, flatten slightly, and place a spoonful of cream cheese mixture in the center, wrapping the dough around it to seal.
- Roll each sealed cookie ball in spiced sugar to coat.
- Bake for 10-12 minutes, or until edges are firm but centers remain soft.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Chill the dough for 30 minutes if it’s too sticky. These cookies can be prepared ahead of time and refrigerated.
