  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon allspice
  • 3/4 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • Spiced sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, baking soda, salt, ginger, cinnamon, nutmeg, and allspice. Stir to incorporate.
  3. In another large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg, molasses, and vanilla extract until well blended.
  5. Gradually mix in the dry ingredients until fully combined; do not overmix.
  6. In a separate bowl, blend cream cheese, powdered sugar, and additional vanilla extract until smooth and creamy.
  7. Roll the cookie dough into balls, flatten slightly, and place a spoonful of cream cheese mixture in the center, wrapping the dough around it to seal.
  8. Roll each sealed cookie ball in spiced sugar to coat.
  9. Bake for 10-12 minutes, or until edges are firm but centers remain soft.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes if it’s too sticky. These cookies can be prepared ahead of time and refrigerated.
