A soft and moist loaf studded with juicy diced strawberries, topped with a glossy strawberry glaze.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup fresh strawberries, diced
  • 1 cup powdered sugar
  • 2 tablespoons strawberry puree or fresh strawberries for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the melted butter, eggs, vanilla extract, and milk.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the diced strawberries.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. While the bread cools, prepare the glaze by mixing powdered sugar with strawberry puree until smooth.
  8. Drizzle the glaze over the cooled bread before slicing. Enjoy!

Notes

Use ripe but firm strawberries for the best texture. Toss diced strawberries in flour before adding to the batter to prevent sinking.
