An indulgent baked brie encased in flaky pastry, topped with sweet caramelized apples and fragrant thyme.

  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 wheel of brie (812 oz)
  • 1 sheet frozen puff pastry, thawed
  • 2 Honeycrisp apples, sliced
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, melt the butter over medium heat. Add the sliced apples, brown sugar, thyme, salt, and pepper. Cook until tender and caramelized, about 5-7 minutes.
  3. On a floured surface, roll out the thawed puff pastry. Place the brie in the center and top with the caramelized apples.
  4. Gently fold the edges of the pastry over the brie and apples, sealing well to prevent leakage.
  5. Place the wrapped brie on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown and flaky.
  6. Allow to cool for a few minutes before serving to enhance the creamy texture.

Notes

For a lighter option, use less butter or low-fat brie. You can also serve with crusty bread or crackers.
