Ingredients

  • 1/2 red onion, thinly sliced
  • 1 cup cooked rice or quinoa
  • Tzatziki sauce for serving
  • Feta cheese for topping
  • Fresh parsley for garnish

Instructions

  1. In a bowl, combine olive oil, oregano, garlic powder, salt, and pepper. Add the diced chicken and marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated chicken until fully cooked and browned, about 7-10 minutes.
  3. In a serving bowl, layer the cooked rice or quinoa.
  4. Add the cooked chicken on top, then layer with diced cucumbers, cherry tomatoes, and sliced red onion.
