- 1 pound ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup shredded cheese (optional)
- Olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion, garlic, and bell pepper, and cook until softened.
- Add ground turkey and cook until browned.
- Stir in sweet potatoes, paprika, cumin, salt, and pepper.
- Pour in the chicken broth, cover, and simmer until sweet potatoes are tender, about 15 minutes.
- Transfer the mixture to a baking dish, sprinkle cheese on top if using, and bake for 20-25 minutes until bubbly.
- Serve hot.
Notes
Choose sweet potatoes that are similar in size for even cooking. Add more chicken broth for a saucier finish, and top with fresh herbs for extra color.
