- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup powdered sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- Jam or chocolate for filling
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
- Mix in the egg yolk and vanilla extract.
- Gradually add the flour and salt, mixing until just combined.
- Roll the dough into small balls and place on a baking sheet lined with parchment paper.
- Create a small indention in the center of each cookie using your thumb or a spoon.
- Fill each indention with your choice of jam or chocolate.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow to cool before serving.
Notes
For best results, work with cool but softened butter and chill the balls if necessary to keep their shape. Store in an airtight container at room temperature for up to five days.
