- 1.5 pounds beef stew meat
- 2 tablespoons garlic, minced
- 1/2 cup unsalted butter
- 1 pound baby potatoes, halved
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried thyme
- 1 teaspoon onion powder
- 1 cup beef broth
- Chopped fresh parsley for garnish
Instructions
- In a slow cooker, add the beef stew meat, garlic, butter, baby potatoes, salt, pepper, thyme, and onion powder. Mix well to combine.
- Pour the beef broth over the ingredients in the slow cooker.
- Cover and cook on low for 6-8 hours or until the beef is tender.
- Once done, stir and serve hot, garnished with chopped parsley.
Notes
For best results, use evenly sized beef pieces and firm baby potatoes. A squeeze of lemon can brighten the flavors.
