- 4 boneless, skinless chicken breasts
- 1 cup crumbled feta cheese
- 1/2 cup hot honey (or regular honey with a touch of hot sauce)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh parsley for garnish
- Lemon wedges for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix the garlic powder, smoked paprika, salt, and pepper. Rub this spice mixture evenly over the chicken breasts.
- In a large oven safe skillet, heat the olive oil over medium high heat. Add the chicken breasts and sear on each side for about 3 minutes until golden brown.
- Remove the skillet from heat and sprinkle the crumbled feta evenly over the chicken breasts.
- Drizzle the hot honey generously over the feta covered chicken.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the feta is slightly browned.
- Once done, remove from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley.
- Serve hot with lemon wedges on the side for an extra kick.
Notes
Pat the chicken dry before seasoning for a better sear. Use a heavy skillet to distribute heat evenly. Let the chicken rest after baking to keep it moist.
