Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup crumbled feta cheese
  • 1/2 cup hot honey (or regular honey with a touch of hot sauce)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the garlic powder, smoked paprika, salt, and pepper. Rub this spice mixture evenly over the chicken breasts.
  3. In a large oven safe skillet, heat the olive oil over medium high heat. Add the chicken breasts and sear on each side for about 3 minutes until golden brown.
  4. Remove the skillet from heat and sprinkle the crumbled feta evenly over the chicken breasts.
  5. Drizzle the hot honey generously over the feta covered chicken.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the feta is slightly browned.
  7. Once done, remove from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley.
  8. Serve hot with lemon wedges on the side for an extra kick.

Notes

Pat the chicken dry before seasoning for a better sear. Use a heavy skillet to distribute heat evenly. Let the chicken rest after baking to keep it moist.
