Ingredients

  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup butter, softened
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/2 cup cherry jam
  • 1 cup powdered sugar (for icing)
  • 1-2 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until fluffy.
  3. Add in the vanilla and almond extracts, mixing well.
  4. Gradually add in the almond flour, all-purpose flour, and salt, mixing until a dough forms.
  5. On a floured surface, roll out the dough to about 1/4-inch thickness.
  6. Cut out cookies using cookie cutters, and cut a smaller shape in the center of half of the cookies.
  7. Place cookies on a baking sheet and bake for 10-12 minutes until lightly golden.
  8. Let cookies cool completely.
  9. Spread cherry jam on the whole cookies, then place the cut-out cookies on top.
  10. For icing, mix powdered sugar with milk until smooth, then drizzle over the cookies.
  11. Allow the icing to set and enjoy!

Notes

Chill the dough if too soft for clean cutouts. Use different fruit preserves for varied flavors.
