- 2 fillets Salmon

- 300 g Spinach, thawed and drained
- 1 Onion, sliced
- 2 cloves Garlic, minced
- 200 g Sour Cream
- 150 g Mozzarella
- 1 tbsp Olive Oil
Instructions
- Preheat the oven to 400°F (200°C) and lightly oil a baking dish.
- Pat the salmon fillets dry and season both sides with salt and pepper.
- Heat the olive oil in a skillet over medium heat and sauté the sliced onion until soft and translucent.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Stir in the thawed, drained spinach and cook until heated through, then remove from heat.
- Mix the spinach mixture with the sour cream in a bowl until evenly combined.
- Spread the spinach and sour cream mixture into the bottom of the prepared baking dish.
- Place the seasoned salmon fillets on top of the spinach mixture.
- Tear or slice the mozzarella and arrange it over each fillet, covering the fish.
- Bake for 12 to 18 minutes depending on fillet thickness until salmon flakes easily and the cheese is bubbly and lightly golden.
- Let rest for a few minutes before serving to allow flavors to settle.
Notes
Choose salmon fillets of similar thickness for even cooking and squeeze lemon over for a bright flavor lift. The recipe is forgiving for different dietary preferences.
