  • 1 tsp Dried Oregano (or fresh)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper (freshly ground)
  • 1/4 tsp Red Pepper Flakes (optional)
  • 1 tbsp Lemon Zest
  • 1 tbsp Lemon Juice
  • 1/2 cup Breadcrumbs (or almond flour for gluten-free)
  • 1 large Egg (for binding)
  • 1 cup Tzatziki Sauce (fresh or store-bought)
  • 2 cups Fresh Vegetables (lettuce, sliced tomatoes, cucumbers)
  • 4 pieces Buns or Pita (whole grain or gluten-free)

Instructions

  1. Finely chop the onion and mince the garlic.
  2. In a large bowl, combine ground chicken, crumbled feta, onion, garlic, parsley, oregano, salt, pepper, and red pepper flakes.
  3. Add lemon zest, lemon juice, breadcrumbs, and the egg to the bowl.
  4. Gently mix the ingredients until just combined without overworking the meat.
  5. Divide the mixture into four equal portions and form each into a slightly flattened patty.
  6. Cover and chill the patties in the refrigerator for at least 15 minutes to firm up.
  7. Preheat a cast-iron skillet or grill to medium-high and oil lightly.
  8. Cook patties 5 to 6 minutes per side, or until internal temperature reaches 165°F and edges are golden.
  9. During the last minute, toast buns or warm pitas on the grill or in the skillet.
  10. Let patties rest 2 minutes after cooking to retain juices.
  11. Spread tzatziki on the bottom bun or inside the pita, add the patty, then pile on lettuce, tomato, and cucumber.
  12. Serve immediately while warm and juicy.

Notes

Use room-temperature ingredients for even binding and cooking. Chill patties longer for firmer texture. Store separately to avoid soggy buns.
