- 2 cups fresh corn (or canned/frozen)
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 3 tablespoons olive oil
- Salt and pepper to taste
- Optional: feta cheese, avocado, or jalapeños for topping
Instructions
- Cook the pasta according to package instructions, then drain and let cool.
- In a large bowl, combine the cooked pasta, corn, bell pepper, cherry tomatoes, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Add any optional toppings if desired.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Use pasta shapes with nooks and ridges for better dressing adherence. Adjust lime and salt to taste.
