Ingredients

  • 1 lb beef (chuck roast or short ribs)
  • 4 cups beef broth
  • 2 cups water
  • 3 cups noodles (e.g., udon or ramen)
  • 1 onion, sliced
  • 2 carrots, sliced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Instructions

  1. In a large pot, heat sesame oil over medium heat. Add the sliced onion, carrots, and bell pepper, and sauté until softened, about 5 minutes.
  2. Add minced garlic and ginger, cooking for another minute.
  3. Add beef and cook until browned on all sides.
  4. Pour in beef broth and water, then stir in soy sauce. Bring to a boil.
  5. Reduce the heat, cover, and let simmer for 120-180 minutes, until the beef is tender.
  6. Remove the beef, shred it, and return it to the pot.
  7. Add noodles and cook according to package instructions.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with green onions and sesame seeds.

Notes

Brown the beef well before adding liquids for added depth. Skim foam during the first simmer for a clear broth.
