Ingredients

  • 4 salmon fillets (about 5 oz each), skin removed
  • Salt and black pepper, to taste
  • 1½ cups ricotta cheese
  • Fresh basil leaves
  • Lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the salmon fillets with salt, pepper, and a drizzle of olive oil.
  3. In a bowl, mix the ricotta cheese with chopped fresh basil and a squeeze of lemon juice until combined.
  4. Spread the ricotta mixture evenly over each salmon fillet.
  5. Roll up each fillet tightly, securing with toothpicks if necessary.
  6. Place the rolls in a baking dish and drizzle with olive oil.
  7. Bake for 15-20 minutes until the salmon is fully cooked through and opaque.
  8. Serve warm with lemon wedges for squeezing on top.
