Instructions
- Preheat the oven to 375°F (190°C).
- Season the salmon fillets with salt, pepper, and a drizzle of olive oil.
- In a bowl, mix the ricotta cheese with chopped fresh basil and a squeeze of lemon juice until combined.
- Spread the ricotta mixture evenly over each salmon fillet.
- Roll up each fillet tightly, securing with toothpicks if necessary.
- Place the rolls in a baking dish and drizzle with olive oil.
- Bake for 15-20 minutes until the salmon is fully cooked through and opaque.
- Serve warm with lemon wedges for squeezing on top.
