Ingredients

  • 1 cup orzo pasta
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 carrot, julienned
  • 2 cups spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook orzo according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add sliced chicken and cook until browned and cooked through.
  4. Stir in the bell pepper, zucchini, and carrot, and cook for 3-5 minutes until tender.
  5. Add spinach and cooked orzo, and mix.
  6. Pour lemon juice over the mixture and season with salt and pepper. Stir well.
  7. Serve hot, garnished with fresh parsley.

Notes

Slice the chicken evenly for even cooking. Use a hot skillet to avoid steaming the chicken. Adjust seasoning before serving for the best flavor.
