- 1 lb chicken breast, sliced
- 1 cup orzo pasta
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 carrot, julienned
- 2 cups spinach
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook orzo according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add sliced chicken and cook until browned and cooked through.
- Stir in the bell pepper, zucchini, and carrot, and cook for 3-5 minutes until tender.
- Add spinach and cooked orzo, and mix.
- Pour lemon juice over the mixture and season with salt and pepper. Stir well.
- Serve hot, garnished with fresh parsley.
Notes
Slice the chicken evenly for even cooking. Use a hot skillet to avoid steaming the chicken. Adjust seasoning before serving for the best flavor.
