  • 1/2 cup powdered sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup additional powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Stir in the lemon zest and lemon juice.
  4. Gradually add the flour and salt, mixing until just combined.
  5. Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Let the cookies cool for a few minutes, then dust them with powdered sugar before transferring to a wire rack to cool completely.

Notes

Use room-temperature butter for best results and chill the dough if it’s sticky. Sift powdered sugar over fully cooled cookies for a prettier finish.
